An
important quality feature with honey is its water content.
This
shows the beekeeper whether the honey is “ripe” and is therefore safe
from fermentation. If honey ferments it loses its flavour or it may
even not be possible to sell it – this is a great loss for the
beekeeper. In order to avoid this, the honey is regularly checked with
a refractometer.
